Mediterranean-Style Chicken Kebabs

When we lived in Las Vegas, one of our favorite places to eat at was a small family-owned Lebanese restaurant. Krysten’s absolute favorite dish was their Mediterranean-stlye chicken kebabs. Now that we no longer live in Vegas, we wanted to recreate this fabulous dish at home. Since May was International Mediterranean Diet Month and we celebrated with our sponsor, Filippo Berio Olive Oil, we knew we had to make this dish!

Mediterranean-style chicken kebabs are an easy and delicious way to enjoy flavorful grilled chicken. What makes this chicken kebab recipe stand out is the marinade! Chicken breasts are marinated in high quality olive oil, Greek yogurt, tomato paste, lemon juice, garlic, and spices. 

Olive oil is not only essential to this recipe, but also to the Mediterranean diet. Whenever we cook anything with olive oil, we always choose Filippo Berio. These easy grilled chicken kebabs are truly a family favorite any night of the week and because it’s International Mediterranean Diet Month, we made a fresh tabouli salad to go with it, also using Filippo Berio. Another one of our favorite ways to serve Mediterranean-style chicken kebabs is with hummus and naan, a baked flat bread made and brushed with olive oil. 

Easy marinated chicken kebabs 

To make the perfect marinade for Mediterranean-style chicken kebabs, you will need the following ingredients: 

  • 1/2 cup Filippo Berio Olive Oil 
  • 1/2 to 2 pounds chicken breast, boneless, skinless
  • 2 large lemons or 1/2 cup lemon juice
  • 1/2 cup Greek yogurt
  • 1 tablespoon garlic paste
  • 1 teaspoon tomato paste
  • 1 teaspoon oregano
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon ground allspice 
  • Salt and ground white pepper

Special Equipment:

  • 1 large mixing bowl that you can cover with a top, foil, or plastic wrap
  • skewers
  • Chef’s knife

Once you gather your ingredients, stir together olive oil, fresh squeezed lemon juice, Greek yogurt, garlic paste, and tomato paste. Next, add oregano, paprika, salt, and pepper. 

Place the chicken in a large mixing bowl and toss to coat in the marinade. Cover tightly, either with a top, foil or plastic wrap, and refrigerate for at least 1 hour or overnight. 

How to assemble kebabs

After the chicken is done marinating in the fridge and you are preheating your grill, you can begin to assemble the kebabs. You can use metal or wooden skewers. If you are using wooden skewers, be sure to soak them in warm water 20 minutes ahead of time. If you don’t, they are likely to burn when you place them on the hot grill. 

This recipe requires 8 standard skewers or 4 extra long skewers. We decided to incorporate vegetables by adding zucchini and onions onto the skewers. You can also use peppers or other vegetables, or omit them all together. In either case, this may change the amount of skewers you will need.

Once you have your skewers (and have soaked them in warm water if using wooden skewers), start threading the chicken and vegetables, alternating each ingredient as desired. Also, it’s important to leave about 1 centimeter of space between the vegetables and chicken so everything can cook evenly. 

How to perfectly grill chicken kebabs

You’ll definitely want to use an outdoor grill to achieve perfectly cooked chicken kebabs. First, preheat your grill to medium high heat and set up for indirect cooking. The next step is probably the most important — brush the grill grates with olive oil (Filippo Berio of course)! This will help to prevent sticking. 

Lay the kebabs on the grill grates over direct heat, but try to space them out a little so that they cook evenly. Do not move the kebabs at all, until nice char marks from the grill appear on the bottom of the kebabs. Once the chicken and vegetables have a good sear on them, move the skewers to the indirect-heat side of the grill and continue cooking until the chicken is no longer pink and the vegetables are soft. Carefully remove the chicken kebabs from the grill and set aside to rest for a couple minutes. Then serve with your favorite sides and enjoy!

Mediterranean-Style Chicken Kebabs

Ingredients

  • 1/2 cup Filippo Berio olive oil, plus more for oiling grill grate and vegetables
  • 1/2 cup plain Greek yogurt
  • 2 large lemons, freshly squeezed for juice
  • 1 tablespoon garlic paste
  • 1 teaspoon tomato paste
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground allspice
  • 1 1/2 to 2 pounds boneless skinless chicken breast, cut into cubes
  • 1 zucchini, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces

Instructions

  1. Stir olive oil, yogurt, lemon juice, garlic paste, and tomato paste together in a large mixing bowl. Add oregano, salt, pepper, paprika, and allspice. 
  2. Add chicken to bowl and stir to coat. Cover and refrigerate for at least 1 hour up to overnight.
  3. Preheat the grill to medium-high heat and oil the grill grate with olive oil. Meanwhile, thread chicken and vegetables onto skewers, leaving 1 centimeter of space between each ingredient. Brush vegetables with olive oil. 
  4. Cook kebabs on the grill for 8-10 minutes, turning occasionally. Chicken is ready when it is no longer pink and vegetables are tender. 

Notes

If using wooden skewers, soak in warm water for 20 minutes before using to avoid burning over a hot grill.
