After seeing all the dirty cabbage recipe riffs on social media, we had to see what the hype was about.
What is Dirty Cabbage?
Dirty cabbage is made with cabbage, ground beef, sausage, onions, bell peppers, and Cajun seasoning. It’s described as a mix between Louisiana dirty rice (which is where it got it’s name) and Southern fried cabbage.
This recipe recently went viral online, and we’re not surprised because it’s super quick and easy. We made it on a Monday before running the kids off to basketball and cheer practice, and we were able to enjoy it afterwards for dinner.

Ingredients

- Cabbage: One head of cabbage may seem like too much, but it cooks down a lot.
- Andouille Sausage: Adds that spicy Cajun flavor. If you prefer something milder, smoked sausage works great too.
- Ground Beef: Combined with the sausage and seasonings, it tastes a lot like dirty rice, just with cabbage instead of rice.
- Bell Peppers: You can use any color bell peppers you like. We went with red and orange.

How to Make Dirty Cabbage

- Brown the andouille sausage in a large skillet or Dutch oven. Remove and set aside.
- Cook the onion and bell peppers until softened.
- Add the ground beef and cook until browned.
- Stir in the Cajun seasoning, salt, pepper, granulated garlic, and granulated onion.
- Add the cabbage and toss to combine. Cover and cook for 10–12 minutes, stirring occasionally.
- Return the sausage to the pan halfway through cooking and continue cooking until the cabbage is tender.
Recipe Tips
- If you prefer softer Southern style cabbage, let it cook a few extra minutes.
- Next time I make it, I’ll probably add a little hot sauce or some red pepper flakes for heat.
- Bacon would be a great addition, like in this Southern fried cabbage.
What to Serve with Dirty Cabbage
We enjoyed this as a standalone dish, but I would also pair it with Southern cornbread or maybe these deep fried pork chops. You also can’t go wrong with this fried chicken recipe.

Ingredients
- 12 ounces andouille sausage sliced
- 1 white onion diced
- 1 medium red bell pepper diced
- 1 medium orange bell pepper diced
- 1 pound ground beef
- 1 tablespoon Cajun seasoning
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon granulated garlic
- 1 teaspoon granulated onion
- 1 large head cabbage chopped
Instructions

Heat 1–2 teaspoons of neutral oil in a large skillet or Dutch oven over medium heat. Add the sliced andouille sausage and cook until browned, about 4–5 minutes. Remove the sausage from the pan and set aside.

Add the diced onion and bell peppers to the pan and cook until softened, about 4–5 minutes.

Add the ground beef to the pan with the vegetables. Break it apart with a spoon and cook until browned and fully cooked through.

Sprinkle in the Cajun seasoning, kosher salt, black pepper, granulated garlic, and granulated onion. Stir well to evenly coat the meat and vegetables.

Add the chopped cabbage and toss everything together until combined. Cover and cook for 10–12 minutes, stirring occasionally, until the cabbage is tender.

About halfway through cooking the cabbage, return the browned sausage to the pan and stir to combine. Continue cooking until the cabbage reaches your desired tenderness. Serve hot.

- Equipment: Large skillet or Dutch oven
- Storage & Reheating: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet over medium heat until warmed through.
