Description

Hot Honey Old Bay chicken wings are a perfect blend of spicy hot honey and the iconic Chesapeake Bay flavors. These deep-fried, unbreaded chicken wings are coated in a spicy sauce made with hot sauce, honey, Old Bay seasoning, and butter.


Ingredients

  • 4 pounds chicken wings
  • 1 cup hot sauce (preferably Crystal)
  • 1 cup honey
  • 1 tablespoon Old Bay seasoning
  • 1/4 cup unsalted butter

Brine (Recommended)


Instructions

Brine Chicken Wings (Recommended)

  1. Bring 4 cups water water to a boil in a pot.
  2. In the same pot, add 1/4 cup kosher salt and 1/4 cup sugar to the boiling water. Stir until completely dissolved.
  3. Remove the pot from heat and let the brine cool slightly.
  4. Add 4 cups ice ice to the pot, stirring until the ice is mostly melted, and the brine reaches room temperature.
  5. Place chicken in a large bowl, container, or resealable plastic bag.
  6. Pour the brine over wings, ensuring they are fully submerged. If using a bag, remove excess air before sealing.
  7. Cover and refrigerate for at least 4 hours, or overnight for maximum flavor absorption.

  8. Before cooking, remove chicken from the brine, rinse, and pat dry with paper towels, Then, proceed with dredge and fry instructions.

Fry Chicken Wings

  1. Pat dry the chicken wings with paper towels to remove excess moisture.
  2. In a deep fryer or large, deep skillet, heat enough vegetable oil to submerge the chicken wings to around 360°F (182°C) to 365°F (185°C).
  3. Carefully add the chicken wings to the hot oil in batches, ensuring not to overcrowd the pan.
  4. Fry until golden brown and crispy, approximately 10-12 minutes, turning occasionally for even cooking.
  5. Meanwhile, prepare Hot Honey Old Bay sauce (see details below). 
  6. Once wings are cooked, at least to 165°F (74°C), use a slotted spoon to transfer the fried wings to a paper towel-lined plate to drain excess oil.
  7. Place the fried chicken wings in a large bowl. Pour the prepared Old Bay Hot Honey Sauce (see below) over the wings and toss until evenly coated.
  8. Arrange wings on a serving platter. Serve with carrot sticks, celery sticks, and your choice of dipping sauce (e.g. blue cheese, ranch).

Hot Honey Old Bay Sauce

  1. In a medium-sized pot, combine hot sauce, honey, and Old Bay seasoning.
  2. Place the pot over medium-low heat and bring the mixture to a simmer, stirring occasionally.
  3. Once the mixture is simmering, turn off the burner.
  4. Add cold butter to the pot and whisk it into the sauce until well incorporated. This step helps achieve a smooth and velvety texture.
  5. Taste the sauce and adjust the flavor as needed. You can add more honey or Old Bay seasoning according to your preference.
  6. To prevent separation, heat the sauce over low heat if necessary. Stir gently to maintain a consistent texture.
  7. The Hot Honey Old Bay Sauce is now ready to be used. Toss your cooked chicken wings in the sauce, ensuring they are evenly coated.
  8. Serve the wings immediately for the best flavor and experience.

Brine Chicken

Bring 4 cups water water to a boil in a pot.

Add 4 cups ice ice to the pot, stirring until the ice is mostly melted, and the brine reaches room temperature.

Place chicken pieces in a large bowl, container, or resealable plastic bag.

Pour the brine over chicken, ensuring they are fully submerged. If using a bag, remove excess air before sealing.

Cover and refrigerate for at least 4 hours, or overnight for maximum flavor absorption.
